New York, May 29, 2025 - Jacob’s Pardon, the American whiskey brand with a storied history dating back to Prohibition, has unveiled a new distinctive release as the first of a Cask Collective Series. Jacob’s Pardon “Cask Collective” 16-Year-Old Oloroso Sherry Cask-Finished Whiskey is a celebration of a global partnership, the unique art of cask finishing, and a commitment to rare craftsmanship. 

Founded by Marc D. Taub and his son Jake, Jacob’s Pardon builds on their Palm Bay International legacy, blending global, multi-generational partnerships. In collaboration with Master Blender F. Paul Pacult and Bodegas Williams & Humbert, the debut release of the Cask Collective Finish Series showcases exceptional craft and heritage.

Jacob’s Pardon “Cask Collective” 16-Year-Old Oloroso Sherry Cask-Finished Whiskey is an ultra-limited release—only 48 barrels—hand-selected by Pacult. This American whiskey features a mash bill of 99% corn and 1% malted barley, bottled at a robust 48.25% ABV. Aged for 16 years, the whiskey is finished in rare 50-year-old Oloroso sherry casks, sourced from the legendary Bodegas Williams & Humbert. For more than 130 years, Bodegas Williams & Humbert has been crafting world-class sherries and brandies, housing one of Spain’s most prestigious soleras. Today, under the stewardship of the respected Medina family—longtime friends of the Taubs—the bodega continues to honor tradition. Their contribution to this release was inspired by the legacy and ancestry of Jacob’s Pardon. 

This whiskey boasts a wheat field golden hue with superb clarity, offering an inviting aroma of toasted marshmallow, tropical fruits, winter spice, and candied almonds. The palate delivers vibrant notes of tangy orange zest, dried fruit, butterscotch, and grilled pineapple, culminating in an extra-long, satiny finish with a touch of bittersweet perfection.

The brand’s story dates back nearly a century, when brothers Jacob and Abner Taub turned to bootlegging during Prohibition to support their family. Caught in a 1929 sting and jailed for six years, they were later pardoned by President Franklin D. Roosevelt, reigniting a family business that launched a multi-generational legacy.
