Stoll & Wolfe Pennsylvania Rye Whiskies and American Whiskey

There’s a clear throughline running across the Stoll & Wolfe lineup, but it doesn’t reveal itself all at once. It builds gradually, glass by glass, proof by proof, expression by expression. Tasting through their Pennsylvania rye, single barrels, American whiskey blend, and Rosen releases feels less like sampling a portfolio and more like tracing the contours of a distillery that’s balancing tradition, experimentation, and a willingness to let variation speak. That mindset comes straight from the way they operate day to day: hands-on, sensory-driven, and comfortable with the idea that not everything can or should be controlled.

The core Pennsylvania Rye is the anchor. It’s where the house style comes into focus, earthy, herbaceous, with that classic Pennsylvania spice profile and a measured sweetness that never overwhelms. It’s designed as the everyday sipper, the reference point, the “this is who we are” bottle. From there, the lineup expands outward. The single barrel expressions take that same DNA and let it stretch, pushing citrus, cola, and spice into more vivid, sometimes unexpected territory. They’re less about consistency and more about capturing a moment, a barrel, a set of conditions that won’t come around again in quite the same way.

The American whiskey blend sits in a different lane, bridging bourbon and rye in a way that reflects both practicality and intent. It’s approachable, a little more oak-forward, and clearly built with versatility in mind. Not every bottle needs to challenge you; some are meant to meet you where you are. That balance between accessibility and identity shows up here in a way that makes sense within the broader portfolio.

Then there’s Rosen Rye, which feels like both a continuation and a departure. It carries the weight of history, revived grain, generational farmland, but it’s not treated as a museum piece. Instead, it’s evolving in real time, shaped by growing seasons, barrel variation, and a distillery that’s actively building a vocabulary for what Rosen can be. It’s less about recreating the past perfectly and more about exploring how that past translates today.

Taken together, these releases show a distillery that isn’t chasing a single fixed profile. There’s a foundation, but there’s also room to move, to experiment, and to accept that variability can be a strength rather than a flaw. That’s what makes the lineup interesting to revisit. It’s not static. It’s a conversation that keeps developing.

Eye: Gold. Thick rims, large globules sloughing off. 

Nose: Earthy, woody stemmed herbs emerge slowly. Herbs shoot up the nostrils, lots of flavor and not too much proof. Oversteeped black tea with a little honey for sweetness. Touch of pine needles. 

Palate: Oly rye bursts over the whole tongue, black pepper spice down the center and spreading to the sides. Dark honey, some toasted oak from the cask. Orange zest expressed over a Sazerac. Mouthfeel is oily, a bit piquant, no proof and only a little astringent. Thins then reforms on the chew. Caramel taffy sweetness opens late. 

Finish: Honey with a pepper bite, dried wood in need of a lacquer. At 90 proof, the medium length and body are right where they should be. 

Overall: I know I personally prefer this at 100-110 proof, but the 90 will be satisfying and highly representative of the Pennsylvania style that Stoll & Wolfe puts out as their everyday sipper. Great entry point for what a PA style rye should be.

Eye: Orange honey. Medium rims and legs, regular tear drops. 

Nose: Sweet wintermint with just a touch of clove, mild proof up front. Grapefruit marmalade, citrusy and bitter, pithy. Green spice drops, black tea, hints of black licorice on the back end. 

Palate: Piquant, a nice zing going up front all the way to the mid-palate, carrying grapefruit, blood orange, and some lime - sounds like a delicious cocktail. Woody stems and darker tones of cola syrup follow. The mouthfeel is effervescent and medium-bodied, like a chocolate bar with pop rocks. Barely astringent, oily, Chinese 5 spice in a dessert. 

Finish: Star anise comes to the fore alongside cola syrup and a caramelizing citrus upside down cake of oranges and grapefruit. Medium finish leaves mild astringency and a light, delicate coating.

Eye: Green tea. Medium sloughing rims, short legs, and globular drops. 

Nose: Strong nose of oak, dry side of bourbon first. The PA rye mint and spice with some woody herb stems comes on a deeper sniff. Lots of newer wood here, like freshly chopped firewood on a stack opened for winter. 

Palate: Mild dill up front, barest prickle on the front half of my tongue. Savory herbs are leading but not dominant. The sweetness of the bourbon comes next, fresh corn in the field and tamales in the husks. Mouthfeel is oily, medium-bodied, remains herbaceous with mild astringency. Cooling sensation goes to the back and sides of my tongue, turns creamy. 

Finish: Barest numbing over the whole palate, rye stronger than the bourbon but not by much. Grows a bit on the finish to extend to the back palate, where the sweetness opens up again. Medium-length finish. 

Overall: A solid everyday drinker. I can see where this falls into the market and it’ll do good business for Stoll & Wolfe. For me, I would prefer a higher percentage of rye, but to each their own.
