Drumshanbo Single Pot Still Irish Whiskey: Tasting Notes

Eye: Light honey. 

Nose: Sweetness from the maturation casks comes out right away. Single pot still spice opens next with hay and fresh barnyard funk. No proof or oak. 

Palate: Buttery caramel and mid-tongue black pepper spice. Some heat from the maturation casks adds body and various types of sugared fruits. Vanilla-forward and custardy, playing well with the proof. Mouthfeel is medium-bodied, the bourbon cask giving mild astringency. The oloroso is sugary, coating, and dark fruity. 

Finish: Plums and glacee cherries become clearer, with barrel char adding a light smoke throughout. Single pot still spice lasts quite a long time on a long finish. 

Overall: The nose was a bit muddled at first, opened up more clearly once I took a sip. The stonefruit and honey complement the single pot still spice at each turn. A great entry whiskey to the single pot still.
