Teeling Single Pot Still Irish Whiskey Single Cask 17 Year Old Loupiac Cask Maturation: Tasting Notes

Eye: Manuka honey. Barely-there rims, very thin legs, tiny teardrops.

Nose: Strong ethanol and acetone at the start with a wine sweetness underneath. Honeyed acidity of the Loupiac emerges as the ethanol fades, rounding the single pot still edges with a moderate oak backbone and astringency. Really grows with air.

Palate: Sweet dessert wine of honey and apricots meets its match in a spicy single pot still whiskey led by clove and molasses, maybe some jaggery, sweet with dark complexity and smoky edges. Sits mid-tongue and hangs on tightly, apple opening alongside pastry crust. Mouthfeel is medium-bodied, creamy and velvety. Milk or semisweet chocolate develops on top of golden raisins and allspice.

Finish: Rounds out to drink close to proof. Honeyed spices last a long time on the front and mid-palate. Shock of French oak spice and smoke on the very end, demanding another pour.

Overall: Back to Rosh Hashanah we go - apples, honey, spices, sweet wine, it’s all there. The single pot still piquancy is perfectly balanced by the cask’s sweetness, with smoky oak from 17 years in cask adding backbone without overt astringency. Wish I’d gotten two of these. Only that odd ethanol start keeps this from being an 8+.
