Teeling Single Pot Still Irish Whiskey Single Cask Virgin Oak Maturation: Tasting Notes
Eye: Black tea. Variegated rims, no legs, droplets tiny and all over.
Nose: Tight at first, then opens with air to brewed black tea with a little honey. Spiced vanilla sugar, quite gentle for the proof. No oakiness to be found. Fresh barrel char hits suddenly, bitter and tannic.
Palate: The single pot still and virgin oak baking spices lance my tongue with a quick lash from tip to mid-palate. Buttery yet piquant, super dark honey in black tea. Floral - marigolds? The honey keeps growing. Mouthfeel is medium-bodied and coating, like drinking that black tea with lots of wildflower honey. Moderately astringent, whole tongue is velvety.
Finish: Oily, baking spices dry out and lacquer the whole tongue. Stays medium-bodied, medium-length, honey caramelizing with a smoky, burnt edge.
Overall: Tight nose had me thinking something was off on this, then it opened after a few minutes. The one-two punch of single pot still spice and new American oak is a hell of a hit, but it’s balanced by a honey that is complex and evolving from sweet to dark to smoky. The black tea and moderate astringency keep both sides in balance.
